2 cups cooked rice
8 oz shredded Monterey Jack cheese
1 1/2 cups cooked, chopped chicken breast
12 oz evaporated milk
1/2 cup finely chopped onion
2 large eggs, lightly beaten
1/4 cup chopped cilantro
2 Tbs butter melted
1 Tbs diced jalapeƱos
Combine ingredients in 2 qt casserole. Bake at 350 for 45 minutes
